I’m thinking about turning my 2016 GSXS750 into a stuntbike. Has anyone seen this done before? Any advice on what cage might work or what size sprockets I should go for? Don’t wanna go to crazy on sprocket size where it will knock my top speed down to 100.

I haven't seen anything in particular in my searching but I also haven't specifically looked on this subject for this bike.
Sprocket wise it's going to come down to the simply math and probably taking notes from what the people with GSXR600 and GSXR750 stunters use. A cage might be tricky, I don't know if any companies are making direct bolt on cages. Might have to find something similar and adapt it or make a custom cage.
There are certainly companies like T-Rex that make complete crash protection so you could at least cover your basics like axle sliders, engine case covers, etc. but the full cage will be the tough part.

Sprockets shouldn’t be a problem. I found that vortex does have larger sprockets that fit. I will most likely have to get a cage fabricated, I found one company based out of Russia called crazy iron that makes a type of cage but it doesn’t look like a real good stunt cage, only sticks out from the frame maybe an inch and doesn’t have any type of puck like normal cages do.

Yeah after looking at this thread I did a quick search and found some also. You may have better luck searching for " GSR750 " instead of gsxs as that is the Euro version of our bikes which as been out for longer.
